Our extended dry-aged New York strips are aged 50 days or more, well past our 21-day standard, to concentrate the beef flavor and develop the nutty, savory depth dry-aged beef is known for. Keep it simple: salt, a very hot pan or grill, and medium-rare. Steaks run about 1/3 to 3/4 lb each.
